Description

“One of the best places to grow coffee in the famous west Guji Woreda is Dogo Sodu. In the west Guji zone, Dogo Sodu is in the Oromia Regions. Shade-grown coffee trees, false bananas, and other corps are parts of Dogo Sodu’s well-known, densely layered semi-forest vegetation system. The optimum agro-ecology for cultivating coffee is exemplified by it. Three hundred and fifty members bring their cherries to this station, which supplies most of its supply. Coffee is harvested by hand; the cherries ripen at different times. Strip harvesting is heavily regulated. After carefully selecting ripe red cherry to guarantee quality, the beans are sorted to exclude any that are damaged or immature.

After being pulped to remove the outer layers and fermented in water to break down the mucilage, the cherries are cleaned and placed on patios or dry beds. They are moved frequently to guarantee even drying and avoid mould. Depending on the weather, the coffee will dry to 10–12% moisture in 12–15 days, after which it will be kept and allowed to rest.”
